CaJohns, it's not just for dinner anymore!  Why shouldn't the first meal of the day have the same zest and flavor as the other two?  CaJohns comes to the rescue with a breakfast that's anything but bland.

 

Ingredients:

  • 1 Tbs vegetable oil
  • 1/2 large onion, sliced
  • 1/2 cup crumbled cooked chorizo
  • 1/2 cup Caboom! Picante Sauce
  • 1 large jalapeno sliced thinly lengthwise
  • 2 Tbs chopped hot chiles
  • 6 extra large eggs
  • 3 Tbs milk
  • 1 tsp salt
  • 10 oz. sliced or hash-brown style potatoes

 

 

Instructions:
  1. Preheat oven to 350F.
  2. Saute onion and jalapeno over medium heat until softened.
  3. Place veggies in a 9 inch round non-stick pan.
  4. Add CaBoom! Picante Sauce, potatoes, chorizo and chiles.
  5. Sprinkle with cheese.
  6. Whisk together eggs, milk and salt.
  7. Pour mixture over veggies, tilting the pan to spread it evenly.
  8. Bake for 30 minutes, or until lightly golden brown.
  9. Remove from oven and let stand covered for 5 minutes.
  10. Slive into wedges and serve.
  11. Cover with additional salsa if desired.
