Chili And Lime Mayonnaise |

Making mayo is a fairly simple process and the recipes are practically endless. This recipe adds a slight bite to the mayo. It is good in place of tarter sauce on fish etc.. Ingredients: - 1 egg yolk
- 1 tablespoon lime juice
- 1 fresh red chili, finely minced
- 2 tablespoons chopped fresh cilantro
- 1 cup (scant) light olive oil
- Salt and pepper to taste
Instructions: - To make mayonnaise, place egg yolk, cilantro , chili and seasoning in food processor and process until foaming.
- With machine still running add olive oil in a VERY THIN stream.
- Taste and adjust seasonings.. Add a little hot water if it is to thick.
- Chill.
