Chili And Lime Mayonnaise PDF Print E-mail

Making mayo is a fairly simple process and the recipes are practically endless.  This recipe adds a slight bite to the mayo.  It is good in place of tarter sauce on fish etc..

 

Ingredients:

  • 1 egg yolk
  • 1 tablespoon lime juice
  • 1 fresh red chili, finely minced
  • 2 tablespoons chopped fresh cilantro
  • 1 cup (scant) light olive oil
  • Salt and pepper to taste

 

 

 

Instructions:

  1. To make mayonnaise, place egg yolk, cilantro , chili and seasoning in food processor and process until foaming.
  2. With machine still running add olive oil in a VERY THIN stream.
  3. Taste and adjust seasonings.. Add a little hot water if it is to thick.
  4. Chill.
