Habenero Chipotle Barbecue Sauce |

This Sauce is Hot and full flavored sweet and tangy. Ingredients: - 6 Habanero peppers or more if you like a lot of heat
- 2 Hidalgo Peppers or Serrano peppers
- 1 Onion rough chopped
- 2 Cloves of Garlic
- 1/4 cup Olive oil
- 1/4 cup raisins
- 2 Cups Dark Brown Sugar
- 1/2 cup water
- Juice from 2 Oranges
- 1/2 cup Apple Cider vinegar
- 2 tablespoons Balsamic vinegar
- 1 small can tomato paste
- 3 Tablespoons course ground mustard
- 2 tablespoons sea salt
- 3 tablespoons Cumin
- 1 teaspoon dried Cloves
- 1 teaspoon dried Coriander
- 1 Tablespoon dried Chipotle pepper
- 1 Tablespoon Tamari soy sauce
- 1/2 teaspoon Old bay Spice
Directions: - Start by combining the sugar, water,both vinegars into a small stock pot
- Bring to a boil on medium high heat lower heat to medium and let it reduce for one minute.
- Add the Raisins the Orange juice and all the herbs and dried ingredients and salt and simmer for about 5 minutes.
- Taste and adjust for your likening, remember the heat will come later.
- In a separate pan place the onions and 1 tablespoon of Tamari Soy Sauce and cook until onions have browned.
- Remove the stems and seeds of the habeneros and the Hidalgo peppers place into a blender and add the olive oil and liquefy until smooth.
- Add the Garlic and tomato paste the caramelized onions and half the sauce and blend until smooth and silky.
- Continue to add more sauce until it taste rite to you.
- Use Tortilla Chips to taste the sauce.
- Pour into jars and process them or refrigerate
