These quick and easy veggie burgers are a great change of pace. You can make them immediately or make them in advance and allow the flavors to meld before cooking. These are very filling, add sliced avocado, tomato and lettuce on a roll and you have a great meal. Ingredients: - 1 15 ounce can black beans, rinsed & drained
- 1/3 cup chopped red onion
- 1 jalapeno seeded and minced
- 1/4 cup bread crumbs or cracker meal
- 2 Tbsp. chunky salsa
- 1 Tsp. ground cumin
- Vegetable oil
Instructions: - Mash beans in medium bowl with fork.
- Add onion, bread crumbs, salsa, cumin, and jalapeno.
- Season with salt and pepper.
- Using moistened hands, shape bean mixture into 2 patties.
- Saute in oil for 4 minutes on each side.
- Serve warm.
