Orange Chipotle Chicken PDF Print E-mail

Ever slap a bunch of ingredients together thatyou had laying around and have it turn out to be something great?  This is one of those recipes. This marinade really is outstanding and full of flavor. 

 

Ingredients:

  • 4 C Orange Juice
  • 2 Limes - Juiced and 1 T Zest
  • 1/2 C Honey
  • 5 Chipotles in Adobo diced from a can with drippings from Adobo Sauce (don't rinse)
  • 1/2 C Low Sodium Soy Sauce
  • 1 T Ground Cumin
  • 8 - 10 Chicken Breasts

 


Instructions:

  1. Combine Orange Juice, Juice of Limes and Zest, Honey, 3 diced Chipotles in Adobo, Low Sodium Soy Sauce, and Ground Cumin and mix very well
  2. Place Chicken Breast in a shallow dish or plastic bag
  3. Pour Marinade in plastic bag
  4. Refrigerate 4 hours to overnight
  5. Drain marinade from chicken into sauce pan
  6. Add remaining dice chipotles to the marinade
  7. Heat to boiling and then simmer and reduce for 20 minutes
  8. Grill chicken over medium heat
  9. Baste with reduced marinade last 5 of grilling
