Bacon Double Fried Chicken PDF Print E-mail

Mere words cannot describe how badly I want this.  Three of my favorite things, fried chicken, bacon, and spices in one dish.  I'm sure the American heart association would like to have words with me but I *must* have this.

 

Ingredients:

  • 1 Fryer Chicken, cut up
  • Juice of 1 Lemon
  • 1 tsp Garlic Salt
  • 3/4 cup AP Flour
  • 3/4 cup Bread Crumbs
  • 1 Tbs Paprika
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 1 cup Milk or Light Cream
  • Bacon Grease
  • Veggie Oil
  • Bacon Gravy (recipe follows)

 

 

Instructions:

  1. Wash and pat dry chicken
  2. Brush with lemon juice
  3. Sprinkle with garlic salt
  4. Combine flour, bread crumbs, paprika, salt, pepper, and cayenne pepper - mix well
  5. Coat chicken lightly in bread crumb mix
  6. Dip chicken in milk/cream
  7. Recoat in bread crumb mix
  8. Set on rack to dry for 15 minutes
  9. Fry bacon in large skillet, remove and reserve reserve 3 Tbs grease for Bacon Gravy
  10. Add enough oil to bring bacon grease up to about 1/2-inch
  11. Over medium heat, lighty brown chicken a few pieces at a time
  12. When all is browned pour off half of grease
  13. Return chicken to skillet, reduce heat, cover and cook for 20 minutes
  14. Uncover and cook for another 10 - 15 minutes until done and crisp
  15. Serve with bacon gravy

 


Bacon Gravy Ingredients:

  • 1/2# bacon
  • 3 Tbsp Bacon Grease
  • 3 Tbsp Flour
  • 1 1/2 cups Light Cream
  • Hot Sauce (to taste)
  • Splash Brandy (optional)

 

 Bacon Gravy Directions:

  1. Heat 3 Tbs bacon grease
  2. Stir in flour
  3. Cook and stir until weel blended and flour turns a light brown
  4. Gradually stir in cream
  5. Season with hot sauce and brandy
  6. Bring to boil
  7. Stir in fried, crumbled bacon
  8. Remove from heat and serve
