Bacon Double Fried Chicken |

Mere words cannot describe how badly I want this. Three of my favorite things, fried chicken, bacon, and spices in one dish. I'm sure the American heart association would like to have words with me but I *must* have this. Ingredients: - 1 Fryer Chicken, cut up
- Juice of 1 Lemon
- 1 tsp Garlic Salt
- 3/4 cup AP Flour
- 3/4 cup Bread Crumbs
- 1 Tbs Paprika
- 2 tsp Salt
- 1 tsp Black Pepper
- 1/4 tsp Cayenne Pepper
- 1 cup Milk or Light Cream
- Bacon Grease
- Veggie Oil
- Bacon Gravy (recipe follows)
Instructions: - Wash and pat dry chicken
- Brush with lemon juice
- Sprinkle with garlic salt
- Combine flour, bread crumbs, paprika, salt, pepper, and cayenne pepper - mix well
- Coat chicken lightly in bread crumb mix
- Dip chicken in milk/cream
- Recoat in bread crumb mix
- Set on rack to dry for 15 minutes
- Fry bacon in large skillet, remove and reserve reserve 3 Tbs grease for Bacon Gravy
- Add enough oil to bring bacon grease up to about 1/2-inch
- Over medium heat, lighty brown chicken a few pieces at a time
- When all is browned pour off half of grease
- Return chicken to skillet, reduce heat, cover and cook for 20 minutes
- Uncover and cook for another 10 - 15 minutes until done and crisp
- Serve with bacon gravy
Bacon Gravy Ingredients:
- 1/2# bacon
- 3 Tbsp Bacon Grease
- 3 Tbsp Flour
- 1 1/2 cups Light Cream
- Hot Sauce (to taste)
- Splash Brandy (optional)
Bacon Gravy Directions: - Heat 3 Tbs bacon grease
- Stir in flour
- Cook and stir until weel blended and flour turns a light brown
- Gradually stir in cream
- Season with hot sauce and brandy
- Bring to boil
- Stir in fried, crumbled bacon
- Remove from heat and serve
