CaJohns delivers a solid Carolina style sauce with the addition of the Orange-Chipotle to the lineup. If you're in the mood for a Carolina style sauce, or you're looking for a good first Carolina sauce to try you'd be doing your taste buds a favor with this bottle.

The first thing that hits you when you take a whiff of this sauce is vinegar. For a Carolina style sauce that's about what you'd expect.  The next thing that hits you is the seasoning mix.  It's rather odd, you catch hints of things but not enough to latch on to any of them.  The combined effect is rather potent, leaving a tingle in the nostrils after inhaling.

Ingredients: Apple cider vinegar, brown sugar, Cajohns Orange Chipotle Seasoning (salt, sugar, onion, garlic, bell pepper, chipotle chilies, modified food starch, turmeric, yeast extract, orange zest, paprika, parsley, citric acid), Worcestershire sauce (distilled vinegar, molasses, corn syrup, water, salt, caramel color, garlic powder, sugar, spices, anchovies, tamarind and natural flavor), garlic powder, onion powder, salt, black pepper, mustard flour.

Like any good Carolina sauce, this one is thin and vinegary.  You can't really test a sauce like this out on a spoon or a cracker it needs to be ON something.  Since we have the pulled pork recipe from CaJohns, what better test bed?

Since the recipe makes so much I decided to widen the taste testing out to a wider audience and made sandwiches for a bunch of so co-workers. The response was universally positive.  Most of the folks had never tried a Carolina style sauce before and were surprised at how different it was.

The combination of the vinegar and the orange-chipotle seasonings was a great complement to the pork but the addition of the Creole slaw sent things over the edge!  I ate far more of these sandwiches than i care to admit but DAMN they were tasty.
