World Foods Thai Sweet Chili with Kaffir Lime Dipping / Stir-Fry Sauce PDF Print E-mail

There's a whole world of spicy foods out there why limit yourself to just the Americas?  World Foods provides an interesting blend of red chilies and garlic blended with kaffir lime and lemon grass.  The result is a subtle fusion of flavors unlike any I've come across before.

 

 

 

Ingredients: Water, Sugar, Vinegar, Dried Chili (4%), Lemon Grass, Salt, Garlic, Kaffir Lime Leaves (2%), Tapioca Starch, Galangal, Xanthan Gum.

A couple of things come to mind when reading that list: 1) There's not a lot of chili in a chili sauce. 2) There's nothing artificial in it.  If, like me, you're unfamiliar with Galangal it's a plant commonly used in Thai cuisine.  Wikipedia to the rescue

Opening the bottle and taking a whiff you just know you're going to be in for a treat.  There's this wonderful blend of aromas.  None of the ingredients over powers the others.  They're all there, just layered it such a way that you can isolate each one of them in turn and appreciate it.

On a spoon you can see that this is a fairly thick sauce, that's to the Xanthan Gum I imagine, with bit's of vegetable matter suspended within it.  This would easily coat just about any food. 

Straight off the spoon this sauce has a very odd flavor.  You get the sweetness from the sugar and the aftertaste of lemon grass and not much else.  Dip some chicken in it and it's a wholly new experience.   The promise made by that amazing aroma is delivered on in spades.  Once again, there's no flavor that over powers the rest.  Imagine a choir singing then picture them one by one stepping forward for a brief solo before returning to the risers.  That's about the only way I can describe the effect this sauce has.  It's very difficult to describe what this sauce tastes like because there's so many nuances to it and things I don't even have a frame of reference for.

As I've been writing this review I keep going back and getting more to dip my chicken in.  I've almost finished half the bottle in just this little while.  The subtle nature of this sauce really lends itself to the chicken.  It accents the  flavor without boggarting your taste buds.

There is, however, a down side:  Zero heat.  I seem to have a knack for picking up spicy food that's not spicy but still tastes good.  The manufacturer lists this sauce as a medium, I'd rate it at someplace below mild.  I'll have to run this by my spice level control group at work to be sure but I imagine everyone could enjoy this sauce without calling it spicy.
